Spicy Potatoes

Nothing glamorous about these potatoes... just a quick delicious comfort food breakfast to go with your pancakes!

6 medium potatoes
1 onion
zesty blend seasoning
salt & pepper

Serves 4

1: Peel and cut potatoes into tiny squares (they cook very fast this way)
2: Add olive oil to pan and cook potatoes and onions on medium with lots of seasoning!
Note: Fried potatoes are pretty self-explanatory, but I just wanted to add them as another breakfast option! :)

Cheesy Jack & Scallion Breadsticks


2 1/4 cup Bisquick
3/4 cup soy milk
3 stalks of scallions
2 slices of Daiya jack wedge cut into small cubes

1: Preheat oven to 450 degrees
2: Mix Bisquick and soy milk together
3: Add scallions and Daiya jack cubes
4: Gently stir them into the mixture
5: Spread a little extra Bisquick on a flat surface and kneed dough about 20 times
6: Twist breadsticks and place on an ungreased baking sheet
7: Bake for 8 minutes, remove from oven and serve while hot!

This recipe makes 12 breadsticks.  I like to add a bit of olive oil on top, sprinkle some salt and bake for another minute or two.  YUM!

Taco Pizza


Dough:
2 1/2 cups all-purpose flour
1 envelope Rapid Rise Yeast
3/4 tsp salt
1 cup very warm water
2 tbsp olive
oil

Toppings:
Lightlife Gimme Lean Ground Beef Style
Taco seasoning
Daiya Cheddar Shreds
1 cup salsa
3 tbsp taco sauce
black olives
crunched tortilla chips


1: Preheat oven to 400 degrees
2: Prepare dough by mixing 2 cups flour, yeast, salt together in a bowl
 3: Add water and olive oil and stir until dough is sticky
4: Pour about 1/2 cup flour on counter and kneed dough until it is smooth and elastic
5: Place in a bowl and cover for about 10 minutes
6: While dough is rising, heat the ground beef style faux-meat and add 1 packet of taco seasoning (or 2 tbsp jarred seasoning or 2 tsp cumin + 1 tsp paprika) along with 3 tbsp water
7:Grease a pan and place dough on the center and stretch it out until it covers the entire pan
8: Bake the crust alone for 10 minutes
9: Remove from the oven and add a salsa "sauce"
10: Add seasoned taco "meat"
11: Drizzle taco sauce over the top
12: Spread around the crunched tortilla chips
13: Add olives and Daiya cheddar shreds
14: Bake for 10 minutes then remove from the oven
15: Brush olive oil on the edges of the crust and return to oven to broil for 2 minutes (watch it very carefully!)
16: Enjoy immediately!

This recipe creates eight large rectangular slices.

Zesty Potatoes Julienne


6 russet potatoes
1/2 chopped onion
1/3 sliced red pepper
3 cubed inches of Daiya Pepperjack wedge
1/3 cup Daiya cheddar shreds
1/3 cup soy milk
zesty blend seasoning -or- Trader Joe's 21 Seasoning Salute

olive oil for cooking

1: Wash and slice potatoes into strips
2: Add olive oil to a pan on medium heat along with potatoes, red peppers, and onion
3: Next add zesty seasoning, stirring well into mix and cover, turning the heat down to medium-low
4: When potatoes are softened (but not too soft-maybe 12 minutes), add both Daiya cheeses, soy milk and a bit of salt and pepper until Daiya is completely melted

Vegetable Chow Mein


This is my take on a favorite my mom used to make... the rice makes the dish go a long way.  Quick and simple to make in under half hour!

La Choy Chow Mein noodles
La Choy Chop Suey vegetables
1 cup vegetable broth
1 tbsp corn starch
white rice
soy sauce
1: Make rice (2 cups boiling water, 1 cup rice, reduce heat to low, cover and set timer for 20 minutes) and set aside
2: Heat vegetable broth and corn starch until thickened, then add chop suey and 1 tsp soy sauce and simmer on low
3: Place crunchy noodles on a plate, then chop suey mixture and a scoop of rice on top


Option: You can also use a vegetarian herb gravy for the sauce that goes with the chop suey:

Red Velvet Chocolate Brownie


 Loooooooooooooooove!!  I honestly may go into a sugar coma... so chewy delicious!

Dry ingredients:
2 cups sugar
1 3/4 cup flour
3/4 cup cocoa
2 1/2 tsp baking powder
1 tsp salt

Wet ingredients:
1 cup vanilla soy milk
2 egg replacers (1 tbsp ground flaxseed + 3 tbsp water = 1 egg)
1/2 cup vegetable oil
1 tbsp vanilla extract
20 drops red food coloring
1 cup boiling water

1: Preheat oven to 350°F
2: Mix all Dry Ingredients together in a medium bowl
3: Add all wet ingredients (except the boiling water) and beat until completely smooth, about 2 minutes
4: Slowly stir in boiling water... the batter will be extremely thin, that's okay!
5: Pour into a greased, floured pan
6: Bake for 30-35 minutes

Cool completely and frost.

Whipped Frosting


 
5 oz (1/2 container) Soyatoo Soy whip
3/4 container Duncan Hines "Cream Cheese" Style Frosting

Add ingredients in to a blender until whipped.  Refrigerate to thicken for about 20 minutes before frosting your dessert.

Spaghetti Carbonara


2 pieces of Field Roast Smoked Tomato Deli Slice (or 5 pieces of Smart Bacon)
3 square inches of Daiya Jack style wedge
1 tbsp Earth Balance
1/2 package angel hair pasta
1: Boil spaghetti according to instruction, drain and set aside.
2: Chop up Smoked Tomato Deli Slices and Daiya and saute in a pan on medium until faux-meat is crisp and Daiya is melted
3: Reduce heat to low, add Earth Balance and drained pasta and stir until pasta is coated
4: Garnish with a bit of parsley and serve immediately

Chili Mac


A simple, quick meal that takes less than 15 minutes to make... an old family favorite! 

1/2 package penne pasta
1 can Hormel Vegetarian Chili

1: Boil pasta for about 11 minutes or until pasta is cooked to your preference
2: Drain and place back into pot and add chili
3: Cook on low for a few minutes and serve
