Peanut Butter Chocolate Chip Wafer Cookies


Super, super sweet... like, toothache sweet!  Delicious with a glass of vanilla soy milk!

3/4 cup peanut butter
1/2 cup Earth Balance
3/4 cup brown sugar
3/4 cup white sugar
1 egg replacer (1 tbsp flaxseed + 3 water)
1 tbsp soymilk
1 1/2 tsp vanilla
1 1/4 cup flour
1 tsp baking powder
1/4 tsp salt
1/3 cup chocolate chips

1: Preheat oven to 350 degrees
2: Cream together Earth Balance and peanut butter
3: Add in both sugars, egg replacer, soymilk and vanilla
4: Next, add in flour, baking powder and salt, then fold in chocolate chips
5: Form into balls and place on ungreased cookie sheet
6: Use a fork to press cookies and bake for 10-12 minutes
7: Let cookies cool for up to 20 minutes to allow them to harden a bit

Chocolate Peanut Butter Smoothie


Definitely an experiment this was!  Next time I think I may try to make it a bit thicker.  Very delicious... a treat!

1 cup soy vanilla yogurt
1/2 cup Silk very vanilla soy milk
1/4 cup peanut butter
8 ice cubes
six crushed chocolate covered peanut butter sticks
-or-
1/4 cup Ghirardelli semi-sweet chocolate chips and 1/2 cup broken Chick-O-Sticks
-or-
1/4 cup Ghirardelli semi-sweet chocolate chips and 1/3 cup peanuts
1: Blend all ingredients together... add more ice if you like your smoothie thicker

Chocolate Covered Peanut Butter Sticks


"Nobody better lay a finger on my..." chocolate covered peanut butter stick!  ;)

1 cup Ghirardelli semi-sweet chocolate chips
1/2 cup creamy peanut butter
1 tbsp Earth Balance
1 tbsp vanilla extract
8-10 mini Chick-O-Sticks

Makes 8-10 candies

1: In a medium saucepan, melt chocolate chips, peanut butter, Earth Balance and vanilla on low until completely mixed
2: While hot, pour a spoonful of the chocolate mixture on a plate or flat surface and roll each Chick-O-Stick in it until they are completely covered
3: Place on wax paper or aluminum foil until chocolate has completely hardened
4: Wrap each piece in wax/foil individually.  I put mine in the freezer and take one out for a treat every now and then.  Very sugary,  but satisfies the sweet tooth!

Peanut Butter & Jelly Bars

Warning: Please only make this if you have a very, very sweet tooth... sugar coma x 100! 

1 package Krusteaz Peanut Butter & Jelly Bars
1 stick (1/2 cup) Earth Balance

Optional: Alternate jelly/jam

1: Preheat oven to 350
2: Mix crust ingredients and 1 cup melted butter until ingredients stick together
3: Spread 2/3 of the mixture evenly in a 9" x 9" pan and bake for 17 minutes
4: Spread jelly/jam on crust while it's still hot.  I used Grandma Jeanne's homemade raspberry freezer jam!  Yum!
5: Crumble remaining 1/3 of crust over the top and continue to bake for 15-17 additional minutes
6: Let cool completely before cutting into small squares
