Buttered Pasta
Quick side-dish for those who love parmesan pasta!
1/2 package pasta
2 tbsp Earth Balance
1/4 package Daiya Havarti wedge
1 tsp dried parsley
salt & cracked pepper
1: Boil pasta according to package instructions, strain and return to pot
2: Add Earth Balance, Daiya Havarti, parsley and cook on low until melted and completely mixed together

Garlic Butter
1 stick Earth Balance
2 tbsp chopped garlic
Mix together and store in an airtight container for use anytime you need garlic butter for a recipe!

Chocolate Covered Peanut Butter Sticks
"Nobody better lay a finger on my..." chocolate covered peanut butter stick! ;)
1 cup Ghirardelli semi-sweet chocolate chips
1/2 cup creamy peanut butter
1 tbsp Earth Balance
1 tbsp vanilla extract
8-10 mini Chick-O-Sticks
Makes 8-10 candies
1: In a medium saucepan, melt chocolate chips, peanut butter, Earth Balance and vanilla on low until completely mixed
2: While hot, pour a spoonful of the chocolate mixture on a plate or flat surface and roll each Chick-O-Stick in it until they are completely covered
3: Place on wax paper or aluminum foil until chocolate has completely hardened
4: Wrap each piece in wax/foil individually. I put mine in the freezer and take one out for a treat every now and then. Very sugary, but satisfies the sweet tooth!

Creamy Roma Tomato Pasta
The perfect meal for a light pasta-coma... just slice up a baguette with salt & peppered olive oil to dip!1/2 pack penne pasta
1/3 block (3 tbsp) Daiya Havarti wedge
1 diced de-seeded roma tomato (or more if you really like tomatoes)
2 tbsp Earth Balance
1 tsp dried parsley
Makes: 2 large servings
1: Cook pasta according to direction.
2: Add chunks of Daiya Harvarti and Earth Balance and cook on medium until melted
3: Turn the burner down to low and add diced roma
4: Cook until everything is mixed well, then add parsley. Serve immediately

Garden Green Bean Saute
garden green beans
small carrots
yellow onion
2 tbsp Earth Balance Vegan Spread
1: Saute all ingredients at once in Earth Balance
2: Simmer on low, stirring occasionally, until vegetables are softened
3: Salt and pepper to taste
*Fun fact: These green beans and carrots are both from my Las Vegas desert garden.
