Taco Burger


1 pack of Gardein meatless ground
Daiya Pepperjack shreds
focaccia bread
1/4 sweet onion
1 tsp chopped garlic
1 tomato
avocado/guacamole
cumin & paprika






1: Saute meatless ground in one tsp olive oil with chopped onion and garlic
 2: Add paprika and cumin, 1 tsp at a time until seasoned to taste.  Then add about 1/3 cup Daiya and stir until melted

3: Cut focaccia bread  in half and melt Daiya on the bottom half and spread avocado/guacamole on top half.
4: Add meatless mixture, tomato, lettuce and onion. 


*Loved this sandwich!  I saved the meatless mixture and the next day, made a taco pizza using a pita as a base and simply melted Daiya, added the meatless mixture and put a little guacamole on top!  Yum!

Creamy Potato Salad

10 russet or red (or both!) potatoes
2 stalks celery
1/2 red onion
1 large dill pickle
6 radishes
Vegenaise
mustard
celery seed
salt & pepper

1: Peel and cut 10 potatoes into cubes and boil until medium soft (too soft and they will be mash!)
2: Strain potatoes in a colander and run very cold water over them to stop them from cooking
3: Slice the celery, onion, pickle and 4 of the radishes and add to the a large bowl with the potatoes
4: Add two generous scoops of Vegenaise along with about 3 tablespoons of mustard and slowly fold the ingredients together, so as not to mash anything
5: Add the celery seed and salt and pepper to your taste preference.  I like to add more mustard just because I like a little more of a tangy taste.
6: Slice the remaining 2 radishes and place over the top of your salad and serve!  YUM!

Review: Cheese: Oh. My. Daiya!

Yes, on my visit to Whole Foods this afternoon, I did silently *scream* over this exciting new discovery!  Oh, the recipes that are swimming through my mind... The other two flavors are Cheddar and Jalapeno Garlic Havarti (wasn't daring enough to try this one yet, but it sounds delicious).

Review: Garlic Jim's

Garlic Jim's has a gluten-free crust that also happens to be vegan.  So I ordered a gluten-free veggie pizza minus mushrooms (not a fan) and minus cheese.  Yum!  I would've added Daiya, but it was great just this way.

Banana Bread


3 overripe brown bananas
1 cup sugar
1 1/2 cup whole wheat flour
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1/4 cup melted Earth Balance
1 egg replacer (1 tbsp ground flax seed/3 tbsp water)

Optional:
1/2 cup walnuts (traditional bread)
-or-
1/2 cup mini Ghirardelli semi-sweet chocolate chips (LOVE for muffins!)
-or-
1 tsp nutmeg (if you'd like to try a doughnut-inspired bread)

1: Preheat oven to 325°
2: Mash bananas and stir in all ingredients
3: Grease bread pan (with Earth Balance) and pour mixture in.
4: Bake for 45-60 minutes, checking with a toothpick in the center until it comes out clean.  The baking time really varies depending on oven/altitude.


YUM!  This bread is THE BEST the day after when it has been refrigerated!  <3

Taco Popcorn


1 bag of Pop-Secret Kettle Corn (or you can do it the old fashioned way via stovetop)
Ortega Taco Seasoning

1: Pop popcorn
2: Add a little bit of the taco seasoning at a time to determine your taste. 

I like the combination of sweet kettle corn and spicy seasoning, so I add enough seasoning to coat at least a third of the bag.  You can buy the taco seasoning by packet or larger container.  This is definitely a treat for those who previously loved cheese popcorn.  Yum!
